- Dans la cuve du batteur, faire mousser/blanchir au fouet à vive allure : 6 jaunes d'œufs + 200 gr de sucre semoule.

- Dans une autre cuve, et avec le fouet bien lavé et dégraissé, monter 6 blancs d'oeufs en neige avec une pincée de sel.
- A l'aide d'une spatule, incorporer d'abord un peu de blanc en neige à la pâte pour la détendre, puis incorporer très délicatement le reste des blancs en neige à la masse, en la soulevant, sans tourner.
- Graisser le moule, le fariner légèrement et y verser la pâte.
- Enfourner 40 mn à 170°C. Surtout ne pas ouvrir la porte du four pendant la cuisson ! Aucune nécessité de tester sa cuisson. Au bout des 40 mn il est parfait (moelleux à l'intérieur).
- A la sortie du four, laisser le gâteau se stabiliser env. 7-8 mn dans le moule.
- Pour le démouler, poser une grille de refroidissement dessus et bien la maintenir, avec la main posée dessus à plat, et basculer le gâteau hors du moule. Poser une autre grille dessus, puis le faire basculer sur l'autre face. Laisser refroidir le gâteau sur sa grille de refroidissement.
