Ingredients and spices that need to be Prepare to make Bhuna Khichudi, Begun Bhaaja, Shaak:

  1. For Bhuna Khichuri
  2. 1 cup Moong Dal
  3. 1 cup Basmati Rice
  4. 4 cups water plus 1/2 cup more
  5. 1 large onion sliced plus 1 medium size onion sliced
  6. 1 tsp cumin seeds
  7. 1 bay leaf
  8. 2-3 green cardamoms,
  9. 2-3 cloves,
  10. 1inch cinnamon stick
  11. 1 Tbsp ginger paste
  12. 1 tsp red chilli powder
  13. 1/2 tsp turmeric powder
  14. 1 tsp coriander powder
  15. 1 Tbsp cashew nuts
  16. 2 Tbsp oil
  17. 1 Tbsp ghee
  18. For Begun Bhaaja
  19. 1 medium size Begun or Eggplant
  20. 1/4 cup mustard oil
  21. 1 tsp red chilli powder
  22. 1 tsp turmeric powder
  23. 1/2 tsp garam masala powder
  24. as per taste Salt
  25. For Shaak
  26. 1 bunch spinach leaves
  27. 1 whole red chilli
  28. 1/2 tsp nigella seeds
  29. 1 Tbsp mustard oil
  30. as required Salt

Instructions to make to make Bhuna Khichudi, Begun Bhaaja, Shaak

  1. For Bhuna Khichudi - in a wok roast Moong Dal until little brown in colour on low flame. Set aside. In a bowl add the roasted Moong Dal, rice and water to soak for 30 mins
  2. In a wok heat 1 Tbsp oil and fry the cashew nuts for 1 min. Set aside. In the same wok heat 1/4 cup oil and fry 1 large onion sliced until brown in colour. Set aside
  3. In the same wok heat 1 Tbsp oil, ghee and add whole garam masala of bay leaf, cinnamon stick, cardamoms and cloves. Stir for 1 min. Add medium size onion chopped and fry to light brown, add ginger paste and cook till raw smell leaves.
  4. Drain the water from the Dal & Rice and wash well. Add to the wok now and fry for 3-4 mins. Add red chilli powder, coriander powder, turmeric powder and garam masala powder and stir for 2-3 mins. Add 1/2 cup hot water and cook for 2-3 mins until oil leaves surface. Add 4 cups water (since it’s Bhuna the ratio is 1 cup Dal plus 1 cup Rice and 4 cups water)
  5. Stir and add salt and cover to cook on low flame for 20 mins
  6. By now the Rice & Dal is cooked. Stir and add fried onions, fried cashew nuts and 1/2 tsp garam masala powder. Cover and on low flame cook for 2-3 mins. Set aside
  7. For Begun Bhaja - wash the Begun or Eggplant and cut 1 cm lengthwise. Smear red chilli powder, turmeric powder, salt and set aside
  8. In a wok heat mustard oil and deep fry the Begun for 2-3 mins on each side. Set aside
  9. For Shaak or Spinach - wash the spinach and set aside. In a wok heat oil, add whole red chilli, nigella seeds and spinach, salt. Cook on low flame until water is released and dried. Set aside
  10. For plating I put pumpkin leaves on a earthen plate and laid the Khichuri with Begun Bhaaja with Shaak on the sides. Enjoy!
