  2. 200 g bottle gourd
  3. 1 carrot
  4. 2 large Potatoes
  5. 2 tbsp wheat flour
  6. To Taste Salt

  8. 1/2 tsp red chili powder
  9. 1 tsp coriander powder
  10. 3/4 tsp curry powder
  11. 1 tsp ginger paste
  12. as per need Oil for frying in appe pan
  13. For gravy
  14. 10 ml oil
  15. 1-2 Cardamoms
  16. 1 small stick to cinnamon
  17. 1-2 cloves
  18. 6-8 black peppercorns
  19. 1 medium size onion
  20. 1 medium size tomato
  21. 6-8 cloves garlic
  22. Handful cashewnuts
  23. as required Keep a tbsp of boiled potato It gives nice taste and thickness)
  24. For making kofta curry
  25. as required Fried lauki carrot koftas
  26. Handful steamed green peas
  27. Prepared masala paste
  28. 30 ml oil
  29. to taste Salt
  30. 1/4 tsp turmeric powder
  31. 1/2 tsp red chili powder
  32. 3/4 tsp curry powder
  33. 1/2 tsp sugar
  34. 1/2 tsp crushed Kasuri methi
  35. 1 tbsp fresh cream
  36. 1 tsp fresh cream for garnish

Steps to make to make Lauki and carrot kofta curry

  1. Grate lauki and carrot. In a colander put these grated lauki and carrot. Add little salt and mix. Keep it as such for 15 minutes. It releases water. Squeeze the water and discard it.
  2. Now add salt, turmeric, red chilli powder, curry powder, coriander powder and wheat flour. Add ginger paste. Mix and make a dough type of mixture. It must not be runny.
  3. Now heat the appe pan. Put little oil into each cavity. Take small portions and put into each cavity. Let it cook and get fried in slow to medium heat.
    Flip and fry the other side too.
  4. Lauki carrot koftas are ready. Keep aside.
    Now prepare masala paste.
    Heat kadhai with oil. Add cardamom, black peppercorns, cloves and cinnamon. Saute.
  5. Add chopped onion and saute. Next add garlic cloves and continue sauteing. Next add cashews. Saute. Next add tomato and fry till tomato are softened.
  6. Let it cool. Take these in a blender jar. Add boiled potato. Add little water and blend smooth.
    If required strain.
  7. Masala paste is ready.
    Next heat a kadhai. Add oil. Add the prepared masala paste.
  8. Add salt, turmeric, red chilli powder, curry powder and sugar. Mix and cook.
  9. As masala looses it's rawness add the fresh green peas. Mix and continue cooking. Add little water if needed. As flavours combine with each other, add fresh cream. When you reach the required consistency, add some Kasuri methi. Add the fried koftas. Need not cook anymore. Koftas will absorb the flavours. Let it settle for 2-4 minutes.
  10. Lauki carrot kofta curry is ready... Garnish with fresh cream and serve hot...
  11. These kofta curry goes well with rice/ roti/ paratha.. enjoy this rich creamy curry
