  8. Placer le foie gras dans le varoma et laisser cuire 14min, vit2, varoma.
  9. Retourner le foie gras et faire cuire 12min, vit2, varoma.
  10. Retirer le foie du varoma et le mettre dans un saladier avec de l'eau et des glaçons jusqu'à refroidissement.
  11. L'enrouler dans un torchon et le laisser reposer au frigo minimum 72h
