  9. Faire fondre environ 100/120g de chocolat et l'étaler sur un rectangle.
  10. Puis, recouvrir d'un rectangle, étaler du chocolat et redeposer le dernier rectangle de pâte.
  11. Avec le rouleau à pâtisserie, étaler la grosse boule de pâte. Et, à l'aide d'un couteau, réaliser des copeaux avec 230/250 g de chocolat.
  12. Déposer les copeaux sur la pâte et les enfoncer avce le rouleau à pâtisserie.
  13. Plier la pâte et partager la en 8.
  14. Faire des boules et enfoncer y 1 carré de chocolat.
  15. Diviser l'ensemble des 3 rectangles en 12 triangles puis réaliser 4 torsades en superposant 2 triangles comme sur les photos.
  16. Former un cercle avec les 8 boules et déposer les triangles entre elles. Il faut alterner les triangles simples et les torsades. Puis, au centre, déposer la boule de pâte restante.
  17. Pour faire dorer la brioche, passer un pinceau trempé dans de l'œuf et la mettre au four à 180°C pendant 1h/1h15
